This recipe is one of my favorite. Easy to prepare and very nutritious.
Ingredients:
3 medium size eggplant
3 ripe tomatoes
1 medium sizes onions
Procedure:
Wash eggplant thoroughly, rinse well adhering water drops. Broil / Grill it over a smolder or baga (burning wood with no flame, glowing charcoal).
Alternatively, grill it over a gas stove flame as described here. Grill until the peel are burnt.Remove the burnt peel carefully by hand or by means of fork. Arrange in plate.
Cut tomatoes, remove the seeds and cut it to small pieces. Chopped the onions. Then mound tomatoes and onions on top of broiled eggplant.
Best serve with mixture of soy sauce and chilli vinegar.
