Cucumber in Sweet and Sour Sauce, Enseladang Pipino

Cucumber is one of my favorite snack. The food itself has no distinctive taste but sought because of its crispiness. I always choose the size not bigger than canned cola. Bigger sizes are less crispy and become watery.

Ingredients:
cucumber, peeled and sliced
1 cup coconut vinegar
1 tablespoon  brown sugar
1 teaspoon black pepper
1 small onion, minced
chili, optional

Just mix all the ingredients and let stand for few minutes. Vinegar mixture can be adjusted to attain the desired mix of sweetness and sourness.

  1. I love enseladang Pipino, you can try also enseladang ampalaya, same ingredients as Pipino, just change Pipino to ampalaya surely you will love it.
