Sodium Citrate and Citric Acid in Beverages ?


Notice the two food additives written below. Citric acid and Sodium Citrate. The whole ingredient list came from canned soft drink.

Citric acid is a natural food preservative. It act by lowering the food pH making most microorganisms unable to grow in medium. But it doesn’t apply to yeast and other acid loving fungi.

It is denoted by E number E330. Fruits of the citrus family contains considerable amounts of it (lemon, calamansi, ponkan, dalandan and sunkist). It is use as preservative and acidulant for juices, beverages, jam, jellies, marmalades and preserves.

Citric acid is generally safe to use. However concentrated amount causes skin and eye irritation and excessive consumption causes thinning of tooth enamel.

Philippine Regulation on Food Additives classified it as antioxidant synergist, buffer and food acidulant.

Now, how about sodium citrate? Most websites  described citric acid and sodium citrate as a common term. They have the same functions and the same safety regulations.
